"Marry Me" Chicken

Ingredients

  • 2 chicken breasts
  • 1 tsp Cowboy Butter Rub
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cloves garlic, minced or pressed
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup freshly grated parmesan cheese
  • 1 tsp Dijon mustard
  • 1/2 tsp dried thyme
  • 1/2 tsp red pepper flakes (optional)
  • 1/4 cup sun-dried tomatoes, drained and chopped
  • Fresh basil, chopped (for garnish)

Directions

  1. Preheat your Pit Boss pellet grill to 350°F using hickory, cherry, or pecan wood pellets.
  2. Pat the chicken breasts dry with paper towels. In a small bowl, combine smoked paprika, garlic powder, onion powder, oregano, salt, and black pepper. Rub the seasoning evenly over both chicken breasts.
  3. Place a cast-iron skillet on the grill and allow it to preheat off to the side.
  4. Grill the chicken over direct heat for 3–4 minutes per side, until golden brown.
  5. Move the skillet to the indirect heat zone of the grill. Add the minced garlic and sauté for about 1 minute, until fragrant.
  6. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the heavy cream, parmesan cheese, Dijon mustard, thyme, and red pepper flakes. Mix well, then add the sun-dried tomatoes.
  7. Nestle the chicken breasts into the sauce. Close the grill lid and cook for an additional 10–15 minutes, or until the internal temperature reaches 165°F.
  8. Garnish with freshly chopped basil and serve directly from the skillet with your favorite sides.
