2 lbs Chicken Wings, split

2 tbsp Cilantro, chopped, divided

1 tsp Cumin

1 Lime, zest & juice

1 1/2 tbsp Olive Oil

Cooking Instructions

Tangy and smoky, these Chile Cilantro Lime Chicken Wings are the perfect addition to your backyard BBQ. The wings are marinated in a zesty lime, cilantro, and ancho chili sauce that gets an extra kick from Blackened Sriracha. The result is a smoky, slightly charred wing with a zesty hint of lime.

Wood Pellet Recommendation

In order to bring out the contrast between sweet, zesty and spicy in this recipe, we recommend using our Apple Blend Hardwood Pellets.

Note: This recipe uses Pit Boss Blackened Sriracha Rub Seasoning.

Note: The FDA recommends to cook poultry to a minimum internal temperature of 165°F.

  1. In a medium bowl, combine 1 tablespoon of cilantro, lime juice and zest, olive oil, Blackened Sriracha, ancho chili powder, and cumin.
  2. Place chicken wings in a resealable gallon bag and add cilantro mixture. Transfer to the refrigerator and marinate for 1 hour, turning occasionally.
  3. Fire up your Pit Boss Platinum Series KC Combo and set it to 350° F. If using a gas or charcoal grill, set it up for medium heat.
  4. Remove chicken wings from the marinade and place on the grill over indirect heat. Grill for 15 to 18 minutes, turning and rotating every 3 to 5 minutes.
  5. Remove chicken wings from the grill, garnish with remaining cilantro, and serve warm.
