Start up your Pit Boss grill or smoker. Once it’s fired up, set the temperature to 225˚F.
Generously rub the brisket flat with 4 tablespoons of Applewood Bacon Rub on all sides. Once your grill or smoker is up to temperature, smoke your brisket for 5 hours, or until the internal temperature is 165˚F.
Wrap the brisket in foil and return it the to the grill or smoker until the internal temperature reaches 190˚F.
Remove the brisket from the smoker and allow it to rest for 15-20 minutes.
Cut the brisket into 1 inch cubes and toss with barbecue sauce and the remaining 2 tablespoons of the Applewood bacon, and place in the aluminum pan. Cover tightly with aluminum foil and return to the Pit Boss at 250˚F and cook for an additional hour or until the brisket is falling apart tender.
