1/2 Lime, zest and juice (for salsa)

1/3 cup Mayonnaise

2 Nectarines, diced

1/2 Red Onion, minced

Cooking Instructions

Don’t let beef burgers take all the glory, these Smoked Ground Pork Burgers are juicy, moist and full of that mouthwatering BBQ flavor. Smoking your burger not only adds wood-fired flavor, but allows the fat to slow render, creating a juicy and crisp burger that’s great with any toppings. In this version, we topped these with a fresh nectarine and jalapeno salsa, creamy avocado, bacon and a zesty cilantro lime mayo.

Wood Pellet Recommendation

In order to bring out that sweet and savory flavor, we recommend using our Fruitwood Hardwood Pellets.

Note: This recipe uses Pit Boss Hickory Bacon Rub Seasoning

Note: The FDA recommends to cook ground meat to a minimum internal temperature of 160°F.

  1. Fire up your Pit Boss Platinum Series KC Combo and set it to Smoke. If using a gas or charcoal grill, set it up for low, indirect heat.
  2. Place ground pork and bacon bits in a mixing bowl, then season with Hickory Bacon. Form into 4 patties, pressing an indent into the middle of each patty. Set aside.
  3. Prepare the salsa: In a mixing bowl, combine the nectarines, jalapeño, red onion, lime zest and juice, and cilantro. Cover and refrigerate.
  4. Prepare the mayo: In a mixing bowl, combine mayonnaise, lime zest and juice, and chopped cilantro. Cover and refrigerate.
  5. Transfer the pork patties to the grill, on the rack, over indirect heat. Cover and smoke for 30 minutes, then increase the temperature to 300° F, and continue cooking for another 20 to 25 minutes, until the internal temperature reaches 150° F. Open the sear slide and grill for 2 minutes, turning and flipping. Remove burgers from the grill and allow to rest for 5 minutes before serving warm.
  6. Assemble the burgers: bottom bun, cilantro-lime mayo, lettuce, smoked pork burger patty, avocado, salsa, top bun.
