Ingredients


2 tsp Baking Powder

1 cup Cheddar Jack Cheese, shredded

1 1/2 lbs Chicken Breast, bone-in

3/4 cup Corn Kernels, Drained

2 Eggs

3/4 cup Flour

1 1/2 tsp Lemon Juice

3 tbsp Mayonnaise

Olive Oil

2 tbsp Parsley, Chopped

2 tsp Pit Boss Champion Chicken Seasoning, Divided

1 tbsp Scallions, chopped

2 tbsp Sour Cream

1 Yellow Onion, chopped

1/3 cup Milk



Cooking Instructions


Light and flavorful, these Pulled Chicken Corn Fritters are finger food at its finest. Serve these delicious patties up as an easy dinner or family friendly appetizer. These fritters are filled with tender pulled chicken, cheddar jack cheese, and kernels of sweet corn then fried up on the Pit Boss Platinum Series KC Combo griddle until golden brown. Serve with a cool, lemony dipping sauce to complete the meal.

Note: This recipe uses Pit Boss Champion Chicken Seasoning. 

  1. Fire up your Platinum Series KC Combo and preheat to 425° F. If using a gas or charcoal grill, set it up for medium-high heat.
  2. Remove skin from chicken breast. Drizzle chicken with olive oil, then season with 1 teaspoon of Champion Chicken. Place directly on grill grate, over indirect heat and grill for 25 minutes, until internal temperature is 165° F. Remove from the grill and rest for 10 minutes, then pull chicken.
  3. In a mixing bowl combine onion, corn, eggs, parsley, milk, cheese, and pulled chicken.
  4. In a separate mixing bowl, whisk together remaining teaspoon of Champion Chicken, flour and baking powder. Combine with the wet ingredients, then cover with plastic wrap and refrigerate for 2 hours.
  5. Prepare dip: whisk together mayonnaise, sour cream, scallions, parsley, and lemon juice. Refrigerate until fritters are ready to serve.
  6. Preheat griddle over medium-low flame.
  7. Drizzle vegetable oil on the griddle, then add ¼ cup of fritter mixture to the griddle and cook 3 to 4 minutes per side, adding additional oil if needed.
  8. Transfer fritters to a wire rack lined sheet tray. Allow to cool for 2 minutes, then serve warm with dip.
