Cooking Instructions

Your favorite mac gets an upgrade with this Gnocchi Mac & Cheese. Easy to make and on the table in just minutes, we replaced traditional pasta with pillowy gnocchi, or potato dumplings, that add indulgence to this already mouthwatering dish. Customize it by adding your favorite cheeses or toppings (think bacon, pulled pork, and more).

Wood Pellet Recommendation

In order to bring out the smoky flavors of this decadent, baked mac & cheese, we recommend using our Competition Blend Hardwood Pellets.

Note: This recipe uses Pit Boss Grills GSP Rub.

  1. Fire up your Louisiana Grills pellet grill on SMOKE mode and let it run with lid open for 10 minutes then preheat to 400° F. If using a gas or charcoal grill, set it up for medium-high heat.
  2. Set a cast iron skillet on the grill, then melt the butter. Sprinkle in the flour and whisk constantly for 1 minute. Slowly pour in the milk and continue whisking until smooth. Use a wooden spoon, stirring often for 2 minutes, until the sauce thickens and coats the back of the spoon.
  3. Remove the skillet from the grill, then stir in the cheddar cheese until melted and smooth. Stir in the mustard, salt, paprika, white pepper, GSP Rub and half the parmesan cheese. Fold in the cooked gnocchi until evenly coated with sauce. Top with remaining Parmesan.
  4. Return the skillet to the grill, and bake for 10 to 15 minutes, until the sauce is bubbling around the edges.
  5. Remove from the grill and cool for 5 minutes, then serve warm garnished with fresh parsley.

Special Tools

  • Cast Iron Skillet
  • Wooden Spoon

Bigger. Hotter. Heavier. Tip

To add a little texture to this dish, sprinkle with a little breadcrumb after removing from the grill, then place under a broiler for 3 to 5 minutes for added crunch and caramelization.
